A thesis of the UPCT develops the processing of fresh seeds of bean desvainadas and ready to consume (30/08/2017)

The researcher of the Institute of Plant Biotechnology (IBV) of the Polytechnic of Cartagena Mariano Otón Alcaraz has developed the industrial processing of containers with fresh bean seeds ready to be consumed, a patented technology that has been transferred for its commercialization to the company pachequera Frutas Esparza , Supplier of Mercadona.

"The current lifestyle and eating habits have defined a consumer profile that demands food that is increasingly natural, healthy, safe, healthy and of high sensorial and nutritional quality, ready for easy, immediate and complete consumption, which have suffered a Minimum and sustainable processing, "explains the researcher, who has just defended the thesis that includes this development, directed by the doctors of UPCT Artés Hernández and Artés Calero.

"In order to obtain the bean seed that has been minimally processed, it has been necessary to undertake a series of process steps that ensure its quality and safety, including prewashing, prewashing, washing-disinfection, rinsing, drying and packaging under modified atmosphere." Explains Francisco Artés Hernández, who coordinates the PhD program in Advanced Techniques in Agricultural Research and Development and Food (TAIDA) of the Polytechnic.

After carrying out the tests in the Pilot Plant of the School of Agronomists of the UPCT, with a precise control of the conditions of process and conservation, the technology was transferred to the facilities of FRUTAS ESPARZA SL, to produce industrially the Bags of minimally processed bean seeds.

To this end, several tests were carried out to set up and optimize the process conditions, monitoring and controlling the parameters of the industrial line.

"The challenge was to maintain an adequate microbiological quality of the seeds during their commercial life," says the new doctor from the Universidad Politécnica de Cartagena.

The research, developed in the Group of Post-collection and Refrigeration (GPR) in the Unit of Food Quality and Health of the IBC of the UPCT, has given rise to patent PT 0072/2012 "Industrial method for the minimum processing in fresh of beans and Peas and processing plant ", Publication No. 2 412 959 (ES 2 412 959 B1), granted in 2014, the inventors of which are Artés Calero, Francisco;

Artés Hernández, Francisco and Otón Alcaraz, Mariano.

These works are also part of the "EUROLEGUME" Project FP7-BBBE.2013.1.2-02.
