That and a ban on tartrazine (yellow dye used mainly in rice dishes and soups) in some countries, part of the thesis and doctorate from the Polytechnic University of Cartagena (UPCT), Pedro José Giménez, who has discovered that the extract Prickly pear can be applied as a natural colorant in food and that brings benefits, it contains anti-cancer, antioxidant and anti-inflammatory substances, among others.

Thesis, supervised by professors from the Department of Environmental Chemical Engineering UPCT, Jose Antonio Fernandez and Juan Ignacio Moreno, concludes that the extract of prickly pear pigment has "an interesting potential as a natural food coloring" besides being rich in bioactive substances that give high demand by consumers biosaludables effects.

The directors explained that the same approach would work in the interest of the food industry to have new yellow natural dyes soluble and can replace tartrazine.

"There are countries that have already banned this dye due to its constant consumption affects health, causes changes in mood, hyperactivity, anxiety and sleep disorders, especially in children," said teacher Jose Antonio Fernández.

They had managed to obtain red dye, also obtained from fruits of prickly pear, which is similar to beet .. Now, following the thesis of Pedro José Giménez, nature researchers have obtained the first results with the dye yellow, although they still have a long way so that it can extend its use.

"We have proven their durability and lasts over time without losing the color and properties," say satisfied while showing the extract, which is characterized by an intense yellow color.

However, so far their use is recommended in ice creams, yogurts, juices and drinks have to be in the refrigerator, because the compound does not support high temperatures "and lose color when it comes into contact with them," he explained.

However they say they will continue research to improve the dye and is marketed in the future.

To carry out the research have received funding from the ministry and the Seneca Foundation, although they warn that since the economic crisis began have suffered a significant cut to finance new projects.
